Recipe's preparation

  1. Place lemon and orange juice into the mixing bowl (Naturally, you can make the juice in the Thermomix and filter out the pulpy bits)

    Add sugar and bring contents to 85⁰C  /speed 2 - this takes about 5minutes (longer if doubling the recipe)

    Pasteurize at 85⁰C  /speed 2 for 8 minutes 

    When finished, pour into your storage containers 

     

    To serve - You only need about 25ml in a 250ml glass - about a 1:10 dilution with cold water. More if using soda water.

    (No Bi-carb Soda is needed as you are using half the amount of lemon juice compared to the Lemon Cordial recipe)

Tip

Keep lemon cordial in stock, and make other fruit syrups when in season.  Mix them together - you  can have a lot of fun with this.! 

Some fruits like apples,  peaches and lychees need chopping finely, then cooking immediately to reach 90⁰C. It's usually the fruits that go brown once cut that need this treatment.  As with Mango, you may like to keep the pulp in the cordial syrup.

 Keep a smaller container of cordial for use and  bulk store the rest in the freezer. 

 Make sure your bowl is very clean. It pays to boil some water in it for a few minutes. You could use the Varoma and 120⁰C to steam sterilize your storage containers at the same time.  

If using a fruit that needs straining - strawberries, lychees, passionfruit,  I pour boiling water over the muslin and leave it sit in the water until needed. Ring it out before use.

 If everything is very clean and sterilized, I've found the cordial keeps well in the fridge.

 Variations - to your hearts content. The lemon adds the needed acidity - if you don't want to use lemon, add limes or use citric acid dissolved in water. I've been making these recipes for a very long time and found a good balance is half lemon half something else. 

If you want to make cordial with very low acidity fruits, cook them for a minute or so ( like blanching vegetables).  You may need to add some citric acid for taste, start with about 1/4 tsp per litre and adjust as needed.

 The sugar content acts as a preservative for the cordial syrup, always use a little more that the total volume of liquid in the bowl.
