Ingredients
Baked nacho casserole
- 50 g Parmesan cheese, crust removed and cut into pieces (2 cm)
- 100 g Cheddar cheese, cut into pieces (2 cm)
- 1 tablespoon Ground Coriander
- 4 garlic cloves
- 1 red chilli
- 1 brown onion, cut into quarters
- 150 g red capsicum, roughly cut into pieces
- 20 g oil
- 750 g Beef mince
- 1-2 pinches salt, to taste
- 400 g chopped tomato, canned
- 70 g tomato paste
- fresh oregano leaves, handful
- 400 g kidney beans, canned
- 300-400 g plain corn chips
- fresh mint leaves, to serve
- Guacamole, to serve
- sour cream, to serve

Preheat oven to 160ºC.
Place Parmesan and cheddar into mixing bowl and mill 10 sec/speed 10. Transfer into a small bowl and set aside.
Place coriander, garlic, chilli, onion, capsicum and oil into mixing bowl and chop 5 sec/speed 5.
Sauté 4 min/Varoma/speed 1, without measuring cup.
Add mince, salt, tomatoes, tomato paste and oregano and cook 15 min/100ºC/"Counter-clockwise operation" Reverse/speed 2.
Add kidney beans and mix 8 sec/"Counter-clockwise operation" Reverse/speed 2.
Pour into large baking dish, top with corn chips and sprinkle with reserved cheese mixture. Bake (160°) for 15-20 minutes until golden.
Serve garnished with mint leaves, guacamole and sour cream to taste.
Tip
Serve with salad.

Went down a treat with the boys. A certain teenager nearly ate the lot himself
I'd probably make this as normal nachos next time, as I found my nachos either were over browned or soggy! The mince mix was tasty so only a small adjustment!

I made this tonight with a few modifications as spices aren't welcomed with open arms by my kids so I lessened the coriander & cumin, no chilli and minus the beans (I forgot them when I went shopping). Nice quick easy simple meal and a twist on normal Nacho's
Absolutely delicious, quite easy and the guacamole from the EDC is great too!
