Ingredients
- 1 kg of ripe tomatoes, washed and chopped in half
- 4 apples, green or red, peeled and cored and chopped in half
- 4 onions, peeled and chopped in half
- 250 g raw sugar
- 60 g Worcestershire sauce
- 300 g apple cider vinegar
- 2 tablespoon golden syrup
- 2 tsp coarse salt
- 2 tsp Mixed Herbs
- 2 tsp mustard powder
- 2 tsp curry powder
- 1 tsp ground black pepper

Place onions and apples into the thermomix bowl and blend on speed 6 for 3 seconds.
Remove and place into a large bowl.
Place tomatoes into the thermomix bowl and blend on speed 6 for 5 seconds.
Remove and place into the large bowl where the onions and apples are.
Weigh in/add all remaining ingredients. Then place into the large bowl and rougly stir.
Place as much as you can back into the Thermomix bowl. I find all of it doesn't fit so I put in about 1/2 or 2/3. This is to let is reduce down a bit before you add the rest.
Cook at 100 degrees, speed 3, 30 minutes. Do not use the measuring cup but instead place paper towel over the bowl and put the basket on top.
After 30 minutes scrape down sides and add the remaining mixture from the large bowl.
Cook again at 100 degrees, speed 3 for 30 minutes. Again use the basket instead of measuring cup.
Scrape down sides and cook again at 100 degrees, speed 3 for 30 minutes. Use your judgement here, you might need only 20 minutes to reduce it to a good thickness. Again use the basket instead of measuring cup.
Now carefully blend, increasing speed up to 7 or 8 over 30 seconds.
Carefully pour into sterilised jars. I find it makes two big jars. Seal and turn upside down until cool.
Tip
This is great at the end of summer when you have got tomatoes and apples and onions in season.

I cut the sugar to 150g and used mustard seed (no powder). As I wasn’t keen to clog up the thermo for the day gradually cooking it down - I put it into my slow cooker to bubble away. Took about 8hours. 3hours with lid on then made it ajar to let it reduce. Then back into thermo for blitzing smooth.
Made 7 (fountain) bottles in total.
NB: Some feed back was to add chilli in the next batch.🌶
But I’ve just started another but only added some Dijon mustard with the seeds.
Great way way to use my less than perfect tomatoes out of our garden. 🍅🍅

Quie nice. I watered it down a bit so I could put it in squeezy sauce bottles. I also only used 50g coconut sugar instead of the other sugar. Still very sweet and the kids like it!!
Make this a lot, it's my 1st choice. I use double strength apple cider vinegar and the consistency is great
This is so good and i love knowing what goes into the sauce compared to store brought. I put 150 grams of sugar and only 1 teaspoon of curry powder after reading other comments. Will definetly be making again. Thank you for great recipe.
Made this today and yummy! Just change a few things as it didnt have it all but a easy recipe to use. I 1/2 the sugar as it was sweet for some and am happy with the taste I have now, I also didnt have enough vinegar and replace it with red wine vinegar. Will certainlty keep using this recipe for my sauce.
