Ingredients

Green Tomato Chutney

  • 500 grams brown onions, Peeled and Quartered
  • 1-2 cloves garlic, Peeled
  • 1.5 centimetres piece fresh ginger, Peeled and cut into coins
  • 1.5 centimetres piece fresh turmeric, Peeled and cut into coins
  • 75 grams raisins
  • 1 level teaspoons sweet smoked paprika
  • 250 grams white sugar
  • 1/2 litres white vinegar
  • 1/4 level teaspoons black peppercorns
  • 1 level teaspoons Mustard seeds, Any colour
  • 1/4 level teaspoons fenugreek, seeds
  • 1/4 level teaspoons chilli flake, dried
  • 500 grams Green Tomatoes, Quartered if bigger than a cherry

Recipe's preparation

  1. Add Onion, garlic, ginger and turmeric. Mix 5 seconds, speed 5. MC on. Scrape down sides of the mixing bowl with spatula. Repeat 5 seconds, speed 5.
  2. Add remaining ingredients EXCEPT tomatoes. MC on. Mix 10 seconds, speed 2 1/2.
  3. Add the green tomatoes to the mixture in the mixing bowl. Place simmering basket on top. Cook 1hour, Varoma, Counter-clockwise operation"Counter-clockwise operation" Reverse, speed 2.
    Sterilise jars whilst chutney is cooking.
  4. Check the consistency is at your desired level. If too thin, continue cooking until the desired consistency is reached , checking at regular intervals to ensure it doesn't catch on the bottom.
  5. Allow mixture to cool for 10 minutes then spoon into sterilised jars. Store in a cool,dark place for 2 weeks ( if you can wait that long😆). Refrigerate after opening. Enjoy.

Tip

Recipe is delicious and forgiving. Fresh spices can be substituted with ground spices or minced (in jar). Any combination of dried fruit eg cranberries or currants substitute well.
I only chop tomatoes if they're bigger then cherry tomatoes this can be done before or after cooking. 3 seconds speed 5 or to suit.

I have also doubled the tomatoes (had to be used) but kept other quantities the same.

However if doing this, reduce temperature to 105 and increase speed to reverse 2.5. Cooking time may need to be lengthened if desired consistency has not been reached after 1 hour.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
