Ingredients

Peach and Onion Relish

  • 800g onions cut in half
  • 1 Tblspn olive oil
  • 50g Butter
  • 900g peach flesh cut up
  • 200g red wine vinegar
  • 180g brown or white vinegar
  • 200g Dark Brown Sugar
  • 300g raw sugar
  • 1.5 Tblspn curry powder
  • 90g Vegetable stock paste
  • 2 Tblspn cornflour

Recipe's preparation

  1. Place 800g of halved onions in TM bowl and chop (7 sec, spd 4)

     

     

  2. Add to TM bowl a Tblspn of olive oil and 50g of cubed up butter.

     

    Saute (20 mins, varoma, Counter-clockwise operation"Counter-clockwise operation" spd 1)

     

     

     

  3. Add the 900g of cut up peach flesh, 200g red wine vinegar, 120g of brown or white vinegar. Note not all the vinegar is added.  

     

    Gently cook (15 mins, 90 degrees, Counter-clockwise operation"Counter-clockwise operation" spd 1.5)

     

     

  4. Add the rest of the ingredients to TM bowl.  Blend by hand the reserved 60g of vinegar with the cornflour in a cup before adding to the TM bowl.  Then add the sugars, curry powder, and stockpaste.  

     

    Cook (10 mins, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" spd 1.5)  

     

    At the beginning of the cook time slowly increase speed to get the contents moving then drop the speed back to 1.5.  Place the steaming basket on top of TM lid.

     

     

  5. Bottle while hot into warm sterilised jars and seal with lids.

     

Tip

To peel peaches place in a bowl and pour boiling water on them.  Let stand for a few minutes before dunking them in cold water.  Use a sharp paring knife to remove skin from the peach flesh.

 

Sterilise jars to be used a few at a time in varoma.  Could then keep them warm in the oven at a low temperature till needed.

    This has lovely flavours and is absolutely delishes! However I found it was very water after the last step and didn't set overnight, so I put it back into the thermie and increased the temperature to 100 and reduced the liquid to a jam consistency this took about 40mins. Great recipe I will defiantly make it again thank you for sharing 😊
