Ingredients

Dip

  • 3 parsnips peeled and chopped into large chunks, about 180 g
  • 3-4 cloves garlic
  • 2 teaspoons sesame seeds
  • extra olive oil
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon cumin
  • 1 teaspoon sesame oil, optional
  • 1 teaspoon Vegetable Stock - EDC
  • 120 g water
  • 45 g olive oil
  • paprika

Recipe's preparation

  1. Brush parsnips with extra olive oil, sprinkle with sesame seeds and roast with garlic at 200 degrees C for 20 minutes, or until soft but not crispy.  Allow to cool.

  2. Blend parsnips, garlic and sesame seeds with vinegar, cumin and sesame oil (if using) on speed 5 for 10 seconds.  Add stock and water.  Set timer for 2 minutes and place MC in lid with open end down.  Turn to speed 5 and while running pour olive oil onto lid.  It will run down into the bowl while mixing.  Once time is up, scrape down and mix on speed 7 for 30 seconds.  Scrape down and repeat if necessary, so that the mixture is smooth.

  3. Place into serving bowl and sprinkle with paprika.  Serve with crackers and vegetable sticks.
