Ingredients
Soup
- 25 g Butter
- 1 brown onion, Peeled & quartered
- 1 bunch Broccoli Head, Roughly chopped
- 150 g potatoes, Roughly chopped
- 800 g water
- 300 g cream
- 190 g extra sharp cheddar cheese, Roughly chopped
- 1 heaped tablespoon Vegetable Stock ECB
- to taste salt & pepper

Place onion into bowl & chop for 5 seconds, speed 7.
Add the butter & saute, 3 minutes, 100 degrees, speed 2.
Add broccoli, potatoes, water & stock to the bowl. Cook for 20/25 minutes (or until vegetables are tender), 120 degrees, speed 2.
Blend on speed 4, slowly increasing to speed 9 until smooth.
Add the cream & cheese. Blend on speed 4 until cheese has melted into the soup.
Season to taste & serve with toasted bread on the side.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

This is hands down, the best Broccoli and Cheese soup I have made! I made it with cheddar and it was still so tasty, so can only imagine how yummy it will be with extra sharp cheese. So easy to make! My vege hating husband asked for seconds!
Delicious! Made it with slightly less cheese but still super tasty!
Really really yummy. Needed something quick, easy and tasty. Can't taste the broccoli for those that don't like their vegies (not an issue with me). I followed the receipe with no changes.
This soup is just toooo good! I didn't have enough cream so added some cream cheese. It was very delish and just wanted I needed after recovering from the flu!
