Ingredients

Soup

  • 1 small piece of fresh ginger
  • 1 small piece of fresh turmeric
  • 3 cloves of garlic
  • 2 tablespoons of Coconut Oil
  • 1000 g of pumpkin, chopped into 2-3cm cubes
  • 1 can of coconut cream 400g
  • 2 tablespoon of vegetable stock paste
  • 150 grams of water
  • 125 grams of raw cashews

Recipe's preparation

  1. 1. Place the ginger, turmeric and garlic into the bowl and chop for 3 seconds on speed 7. 

     

  2. 2. Scrape down the bowl and add the coconut oil and put on varoma for 3 minutes.

  3. 3. Add the pumpkin and chop for 10 seconds on speed 6

     

  4. 4. Add the coconut cream, stock paste and water and put on for 20 minutes speed 1 

     

  5. 5. Finally add the cashews and slowly increase the speed from 3-9 for 1 minute.

     

Tip

Serve with a nice crusty sourdough and some fresh chopped coriander. 

If you can't find fresh tumeric you can substitute for a teaspoon of turmeric powder.

    I made this tonight and only used 270ml of coconut cream with the remaining quantity and water substituted by chicken bone broth and added only I tablespoon of edc veg stock. Delicious, thank you
