- 230 grams self raising wholemeal flour
- 120 grams Coconut Oil, solid
- 2 EGGS (50G)
- 120 grams Fresh strawberries
- 60-80 grams plain yoghurt, Made from Basic Cook Book

Preheat oven to 180 degrees.
Add flour, coconut oil, and eggs to bowl"Closed lid" , mix 20 seconds on speed 4.
Add yoghurt, mix 10 seconds speed 5. Add more yoghurt for desired consistency.
Add strawberries, for a smooth mixture 10 seconds on speed 5, for a chunky mixture 8 seconds on speed 3.
Spoon into oiled mini muffin pans and bake for approximately 15 minutes.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Sorry but this was horrible
I didn't have strawberries - put some chopped raw apple in at step 3 and 1/4 tspn cinnamon, and processed 20 seconds speed 5. Worked great thanks.
My ten month old son loves them. Thank you!
Made a batch up yesterday and between the 9mth old/ 5yr old and Husband they are nearly all eaten up! I guess they must have been tasty!
Really nice, kids loved them which is always a bonus with sugar free recipes. For myself served with a little srizzle of honey and some additional yogurt. Lovley guilt free recipe.
Made 12 large muffins and cooked for 30 mins!
