Ingredients
Biscuit Dough
- 150 g almonds
- 90 g gluten free flour
- 60 g buckwheat flour
- 100 g desicated coconut
- 90 g palm sugar, chopped
- 1 tablespoon honey
- 50 g coconut oil
- 50 g olive oil
- 1 heaped teaspoon bicarbonate of soda (baking soda)
- 2 tablespoons Boiling water

Preheat your over to 170˚C or 160˚C fan forced. Line cookie trays with baking paper
Chop the almonds for 3 seconds/speed 6. Check if desired size. If not zap them again. Add the flours and coconut. Mix on speed 3 for 5 seconds. Empty into a separate bowl.
Place the chopped palm sugar, coconut & olive oil and honey into the Thermomix bowl and set for for 6 minutes/90˚C/speed 2 or until palm sugar is fully melted. Combine the baking soda and boiling water and add to the mixture.
Add the reserved dry ingredients and mix for 20 seconds/speed 3. Check if mixing is sufficent. If not, mix in increments of 5 seconds/speed 3 for as many times as it needs. (Tip: Reverse the blade direction if necessary to prevent over processing of mixture. This step is a mixing process rather than a chopping one.)
Roll the mixture into balls (desert spoon sized) place on oven trays about 5cm apart. Press biscuits down lightly with the palm of your hand.
Bake about around 8 minutes or until lightly browned. Leave on the cookie tray for 3 minutes and enjoy with a cuppa.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
