- 3 lemons
- 75 grams unsalted butter cubed
- 150 grams sugar
- 3 eggs

1. Peel the rind of the lemons
2. Grate in the thermomix bowl Speed 7 for 7 seconds. Scrape and repeat as necessary.
3. Insert the butterfly
4. Add the juice of the lemons and all remaining ingredients into mixing bowl.
5. Cook for 8 minutes on 80 degrees speed 3 or until at desired consistency
6. Pour into a sterilised jar and refrigerate until use.
Tip
Original recipe calls for 225g of sugar.
Spread on bread and enjoy!
