Heather, the recipe given above is fantastic. Use a good quality yoghurt to start with. i also add organic milk powder to mine so it is extra creamy. I've been adding acidophillus powder to it too as we need some extra good bacteria at the moment in our tummies! the more you make the yoghurt the better (thicker) it will get. mine is really thick and creamy now. we went through a kilo of it in a day!

I have only had my Thermomix a short time but really want to make my own yoghurt using the Thermomix and thermoserver. I have tried the recipe in the Everyday cookbook and another for Greek yoghurt, but both have been unsuccessful. Does anyone have any foolproof recipes or hints?

I am also intersted in making quark. Has anyone tried this?

In anticipation of help and success.

Heather

That was the recipe I used Chrissy.  It was on the other forum for thermomix's.  It has thickend up nicely today. It seems I am reacting to it though, had dreadful nightmares last night. Will see how I go tonight.

No I don't add milk powder. Its too expensive and contains preservatives. I think its a needless step when previous generations could make yogurt without it.

Also Chrissy, do you add milk powder to the mix?

Thanks Chrissy, I made a batch last night which was very watery and I realise now that I didn't need to add the water to the Thermos like you do with the Easi-yo packet mixes.  I'll try again today with your recipe and see how I go.

thanks chrissy sounds fantastic, love the idea to use the small container to make sure there's some for next time!

Ok this is my no fail yogurt recipe. I can't remember where I found it but the EDC version never worked out.

1 litre of milk (I use unhomgenised as its nice and creamy)

1/4 cup of starter yogurt (Jalna blue Lid Leben is the best: http://www.jalna.com.au/products/whole-milk.html)

Heat 1 litre of milk for 20mins/80 degrees speed 1/2 or 15min/90degrees/1-2 (this is where it is important to point out it is a waste of money using raw milk as this pasturisers it, for USA people this is ultra pasturisation)

Let this cool to 37 degrees, keep putting it back on the dock to check temp. I cool it down in about 10mins by placing freezer blocks inside the TMX bowl.

Add 1/4 yogurt starter and mix for 10secs on speed 5-6. Heat this for 20mins/37degrees/speed 1.

Pour into thermomserver and let it stand in a warm place (unused microwave, oven) for at least 5-6 hours. At this point you can check it and it should be thick and creamy. Place in fridge to set.

I prefer to use my old Easiyo thermos and simply put it in a small yogurt container (to be used for the next batch as starter) and the 1 litre one. This stacks perfectly inside the Easiyo thermos without the red thing or water. At 4 hours I switch them around so the little is ontop of the big one and add 1 tablespoon of hot tap water to the bottom of the thermos.

So far this hasn't failed me and I have used and tried countless yogurt recipes. Goodluck.

OK, so it is now thicker and cold and better. I added WAY too much sugar to it and some vanilla and it was perfect.  Will try honey as the sweetener instead next time.

OK, its rather thin instead of very thick like I was expecting. It was still warm, which I think didn't help, but the boys (including the baby) didn't like it.  My 2yo girl was happy enough but even she didn't finish a small bowl. It has been forever since we had bought yoghurt so that isn't the issue. I think I will need to add some sugar and vanilla flavouring, or maybe some honey. Something.

I think it will do well to make the cream cheese though, will try that shortly, its soooo hot here and I am too tired and dissapointed to do anything else just yet.

We have a milk protien intolerance.  (Well I say we, but I really mean the children, but as X is fed by my milk still it in essence applies to me too).  We tolerate what is known as A2 milk protien, found in A2 milk.  So we are using A2 milk to make our yoghurt.  Milk powder would have a mix of A1 and A2 milk protiens and not be suitable for my kids.

Not sure how the yoghurt has gone, I just looked at it and it looked fairly thin. I hope it worked ok, I am really looking forward to it. I cant tolerate yoghurt from the shops because of its age (a natural chemical called amines which increases with age of things like yoghurt, cheese, meat products and some vegetables as well).  Will let you know in an hour or two how I fared.

I'm interested why you can't have milk powder - is that lactose or dairy intolerance? If so, what milk do you use? My daughter and I are lactose intolerant, but ok with yoghurt and cheese (in moderation), but my youngest son doesn't seem to be as tolerant - I'm thinking if the yoghurt can be made with different milks (like rice milk or similar - goat's milk is too expensive and he can't tolerate that either) he would be able to enjoy it too. Thanks! Smile

I have been researching this this week too. Great minds think alike Smile

I am using a recipe I found on another forum.  We cant have milk powder.   By the look of it the recipe in the EDC is long in cooking times, I would think if anything you would reduce the cooking times. But just use it and see how you go.  I am going to go put mine on very soon,  Then it will be ready for lunch Party

For anyone else thinking about making yoghurt who doesn't have a yoghurt maker, it is worth noting that in essence the thermoserver is a round bowl thermos. So you can use that to set your yoghurt in. Love

Ok off to boil some milk.  Will post this afternoon and let you know how I go.

Hello! I'm about to make my first batch of yoghurt in the TM - I have been making it in the Easiyo thermos before I got my TM. Does anyone have any tips to help it be a successful venture? Someone mentioned to me something about cooking it for longer or at a higher temp so that it was nice and thick - but I can't remember what it was they said! Thanks, Sarah
