- 150 g Cashews
- 150 g Macadamia
- 8-10 --- medjool dates pitted
- 50 g dark chocolate

1. Place cashews and macadamia's in thermomix bowl and blend on speed 8 for 1 minute.
2. Add pitted dates. Start by adding 8 and then add more as needed (the amount needed will depend on how "sticky" the dates are). Blend on speed 7 in 30 second intervals, checking if the dough has started to form.
3. You will know that the dough is forming when the mixture begins to clump together and stick to the sides.
4. Break dark chocolate into pieces and add to mixture. Blend on speed 7 for 30 seconds.
Alternatively, to make the bites completely raw, you can use cacao nibs. When you add these to the bowl, mix the dough on reverse speed 4 for 30 seconds to mix them through.5. Take heaped tablespoons from the bowl and roll them into balls. Keep refridgerated.

I take these bites every time I'm invited somewhere and my friends (none of whom are gluten and dairy free) absolutely love them and have started to ask for them!
