Ingredients
- 1 bunch chives fresh
- 2 avocados, medium size and ripe
- 250 grams chicken stock, cold
- 500 grams sour cream, (can be light)
- 1 lemon, juice of
- 6 sprigs mint leaves
- 2 Bacon rashers diced
- 1 pinch Cayennne Pepper
- 1 red chilli, small

Cut chives into 3cm lengths and process in bowl for 3sec speed 7. Remove and set asside.
Place peeled and seeded Avocado, lemon juice, chicken stock, cayenne pepper and salt (to taste) into TM bowl and process speed 7-8 until smooth. Time will depend on softness of Avocado. Now add butterfly, and sour cream and process 10-15 sec on speed 3-4 until light. Add chopped chives and just incorporate. Test seasoning and add more salt, lemon juice or pepper as needed. Transfer to a cold bowl and refrigerate at least 1 hour before serving.
Fine dice 2 rashers of bacon and dry fry in a small pan untiil crisp. Drain and set asside.
Slice chilli into small rounds and set asside.
At last minute serve in chilled bowls and garnish with a sprig of mint, chilli and bacon chips.
