Healthy Lentil Soup

  • 2 tablespoons EVOO (olive oil)2
  • 2 --- carrots, Cut into rounds
  • 2 stalks Celery, Cut into pieces11
  • 1 --- Leek (white part) only, Cut into pieces
  • 2 tablespoons tomato paste
  • 200 grams Red or Brown Lentils, Rinsed and drained
  • 1200 grams water
  • 2 heaped tablespoons vegetable stock concentrate, EDC
  • 400 grams Cannelloni Beans, Rinsed and drained
  • 400 grams Chopped Tin Tomatoes
  • 1 level teaspoon smoked paprika
  • 2 level teaspoons Ground Coriander Seed

Garnish

  • Crusty Bread, To serve
  • 8 sprigs parsley, Chopped

Recipe's preparation

    Hearty Lentil Soup
  1. 1. Place parsley in mixing bowl MC on. Chop 3 sec /speed 8. Scrape bowl and transfer into dish and set aside. Without washing bowl
  2. 2. Place Celery, Carrot and Leek in mixing bowl MC on. 5 sec/speed 5.

    Scrape down sides of bowl. Add oil saut'e 10min/120 Deg. Counter-clockwise operation"Counter-clockwise operation" speed 1. Till soft.
  3. 3. Add tomato paste 1min/100 Deg. Counter-clockwise operation"Counter-clockwise operation" speed 1.

    Add lentils,vegetable stock paste and 1200g water reserve 200g .

    and cook 45min/ 100deg Counter-clockwise operation"Counter-clockwise operation" . speed 1. Steaming basket on top.

    Until lentils are cooked.
  4. 4. Add tomato, Cannellini beans, coriander, paprika, salt and pepper to the mixing bowl. Cook 20min/ 100deg speed 1 Counter-clockwise operation"Counter-clockwise operation" . Remaining water if there is room. Cook till Soup is thick, taste for seasonings and stir in half the parsley. 20 Sec/ Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" [
  5. 5. Serve in Shallow bowls top with parsley and freshly ground black pepper and crusty bread.
