Spinach & Ricotta Delicious Rolls
- 100 g spinach or silverbeet, Preferably fresh
- 80 g Parmesan cheese
- 500 g Fresh ricotta cheese
- 1 egg
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 cloves garlic
- 1/4 tsp Nutmeg

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Preheat oven to 210 degrees.
Line two trays with baking paper or use your Thermomix baking mats.
Add onion, garlic and spinach and "No counter-clockwise operation" speed 6 for 5 seconds.
Add ricotta, egg, salt, pepper, Parmesan, nutmeg and "No counter-clockwise operation" 1 minute speed 3.
Lay thawed pastry sheet flat on bench.
Cut in half to make two rectangles.
Spoon some mixture down the middle of each rectangle ensuring it goes all the way to the end.
Gently roll each half of the pastry ensuring the pastry covers up at least 1-2cm so they stay closed. Cut each log into 4 even pieces.
Place onto prepared trays.
Spray oil on top or brush with milk then sprinkle sesame seeds and poppy seeds.
Bake 25-30 minutes until golden brown.
Will freeze well once cooled.

Tip
"Sous-vide" You could use frozen spinach but ensure water is squeezed out well.
