- 120 g Butter, softened
- 100 g brown sugar
- 1 --- egg
- 250 g flour
- 1 tsp baking powder
- 1 tsp ground cinnamon

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Weight butter and sugar into mixing bowl, then mix 1min/speed 3.
- Add egg and mix 30 sec/speed 3.
- Add 250g flour, 1 tsp baking powder, 1 tsp ground cinnamon, 1 tsp ground ginger, 1 tsp mixed spice.
Knead Dough 1 min. - Bake at 180 for 10 minutes, until browned.
Leave on trays for a couple of minutes, then transfer to a wire rack to cool completely. - Weigh icing sugar into mixing bowl. Add 2 tablespoons of boiling water and mix 30 sec/speed 3.

Tip
If you have time between steps 3 and 4, you could wrap your ball of dough in gladwrap and refrigerate for 30 min to make your dough more firm.
