Cupcakes
- 60 g white sugar
- 1 lemon, zest only, no white pith
- 130 g Butter
- 2 eggs
- 1 egg yolk
- 170 g self-raising flour
- 180 g coconut milk
- 1000 g water
Citrus Dessert Syrup
- 170 g caster sugar
- 15 g water
- 60 g g freshly squeezed lemon juice (approx. 2 lemons)
- dessicated coconut, toasted or untoasted, to garnish

Recipe's preparation
Place 12 silicone cupcake moulds into Varoma dish and onto Varoma tray, then set Varoma aside.
Place sugar and lemon zest into mixing bowl and mill 10 sec/speed 9.
Add butter and mix 8 sec/speed 5.
Add eggs, egg yolk, self-raising flour and coconut milk and mix 8 sec/speed 5. Scrape down sides of mixing bowl with spatula, then mix a further 4 sec/speed 5. Fill cupcake moulds half-way, then set Varoma aside. Clean and dry mixing bowl.
Place water into mixing bowl. Set Varoma with cupcakes into position and steam 22 min/Varoma/speed 1.
Remove cupcakes and allow to cool. Clean and dry mixing bowl.
Place all syrup ingredients, except desiccated coconut, into mixing bowl and cook 3 min/90°C/speed 2. Pour hot syrup over puddings, garnish with coconut and serve.

This recipe is featured in the Cooking with Varoma cooking class. This recipe is suitable for TM31 and TM5.
Gluten free option: replace self-raising flour with 100 g almonds and 85 g coconut. Place almonds and coconut into mixing bowl and mill 10 sec/speed 7. Add 20 g cornflour in step 3 with the eggs. Proceed as per recipe. Steaming time in step 4 may need to be extended by up to 5 minutes.
Jam pudding: Place ½ -1 tsp jam into the bottom of each mould before adding cupcake batter. Proceed as per recipe.

Lemon cupcakes with citrus syrup - These were fabulous, not too sweet and just the right amount of tartness. I cooked exactly as per the recipe but used ramekins greased with butter instead of silicone cupcake moulds. Note to self: the cupcakes are easier to remove from the ramekins while still warm. I will be sure to make these again! Thanks for sharing!

Maybe I need to do a class where they make these because I must be doing something wrong. They were rubbery but the taste was there. I was so deflated about the look and texture of them that I didn't even bother icing them. I would love to know what I did wrong, I followed the recipe exactly.

These lemon cupcakes yielded 15 . They are so easy to make and are really tasty. Cream cheese icing with grated peel in, is a winner!!!
The second time around I did not ice them. and I used much less sugar for the syrup, about 120 g.,plus the juice of 2 lemons, as we prefer the tartness.

I made them with the zest of 2 lemons because I was using 2 for the syrup, & a little bit less sugar in the syrup and it made it so tangy.

Yum, these were delicious I made these yesterday after seeing them made at a demo . made exactly to recipe and they were enjoyed by all! Will try a chocolate version if I can find one ! Highly recommend you try especially with the abundance of lemons at the moment

These were super easy and delicious. I made them with a combination of both lemon and lime zest and juice. The other thing I did slightly differently was when I took the cooked cakes out of the Varoma I poked about 12 holes into each one with a skewer and then poured the syrup on the cupcake and into the holes. I then let them cool down so that the cake had plenty of time to suck up the syrup. I then reheated them in the microwave quickly and served them warm with icecream ...... YUMMY!!

Yum! Tried these at a cooking class and knew that my hubby would love them. Hubby loved then and between 4 of us there was only two after we all had our fill. So yum! perhaps served with ice cream or something else, this dish would go further. The syrup alone was a little off to us, then we tried it with the cakes - as is intended - and it was a marriage made in heaven.
