Ingredients

Pastry

  • 400 grams plain flour
  • 110 grams Butter, cubed, icy cold
  • 110 grams lard, cubed, icy cold
  • 1 teaspoon salt
  • 100-120 grams water, icy cold
  • 1kg Sausage Mince
  • 1 egg
  • Milk

Recipe's preparation

    Pastry
  1.  

    Line 2-3 baking trays with baking paper.

    Put plain flour, butter, lard and salt in TM and mix for 10 sec/ Speed 6 or until it resembles fine breadcrumbs.

    Add cold water to TM little at a time knead 10-20 seconds making sure dough is no too sticky.

    Tranfer to a floured surface and bring dough together, knead lightly then wrap in plastic and pop in fridge for 30 minutes.

    Preheat oven 200 deg C

    After 30 minutes cut dough in half and roll out to a 30cm x40cm rectangle.

    Place a log of sausage mince at one end roll to half way cut and seal with a little water. Continue with another log of sausage meat.

    Repeat with other half of pastry. You will end up with 4 really long sausage rolls. Cut to whatever size you would like, brush with egg/milk wash, and pop into preheated oven 20-30 minutes till golden. Enjoy!
