Ingredients

Banana and Walnut Bread

  • 400 g overripe bananas
  • 100 g walnut halves
  • 100 g Rapadura Sugar
  • 1 tsp ground cinnamon
  • 1 tsp grated nutmeg
  • 320 g Self Raising Flour
  • 1 tsp bicarbonate soda
  • 120 g full cream milk
  • 50 g Rice Bran Oil (or substitute oil)
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp raw sugar

Recipe's preparation

    Banana and Walnut Bread
  1. Weigh banana into bowl then mash on Speed 6-7 , 5 secs or until desired consistency. 

  2. Weigh in rapadura, spices, flour, bicarb, walnuts and remaining wet

    ingredients.  

    Mix on Speed 4 for 10 seconds until ingredients are just combined.

  3. Line a large bread/loaf tin with baking paper. 

    Pour mixture into loaf tin and sprinkle the 2tbs of raw sugar over the top.

    (This makes a delicious crusty top and if you toast the slices,

    the sugar crytals caramelise along the top edge. Yum!)

  4. Bake in a Moderate oven (170 degrees for fan-forced) for approx 45 mins

    or until inserted skewer comes out clean.

Tip

Try toasting the slices and serve with butter

Also good with 2 tbs of Chia Seeds mixed through batter

    Fantastic! I just made this for the first time. I used 75g of raw sugar in the cake and more on top and 40g of olive oil and it was fantastic!! I will be keeping this recipe and making it lots more in the future, I always seem to have bananas and this seems a quite healthy option of using the older ones. Thanks so much for sharing.

    This is a great recipe. Used a combination of sugar and honey as had no rapadura, might halve the nutmeg next time. Can't believe I forgot to add the walnuts though 🥺

    BEST B-bread I’ve ever made!! (& I’ve tried a lot of recipes). This one produces a lovely fluffy centre with a crunchy top. Only used 75g raw sugar & didn’t have enough banana so made up balance with grated apple. Also added a couple of tablespoons of chia seeds. Topped batter with roughly chopped walnuts & sprinkling of oats, pumpkin seeds & raw sugar. DELISH!!

    only had 200 gram banana, added 2 carrots and some pineapple pieces
    changed sugars to only raw. used 50 grams sugar.

    Winner recipe!
    I reduced sugar by half and added in 5 dates (might try less next time). Also added in 2 tbsp of black chia, and it came out amazing. Definitely adding to my go-to recipes.

    Perfect recipe. I halved as I only had 200g of bananas. I used wholemeal flour and added the suggested chia seeds. The bread is not too sweet so would not cut down the sugar. Delicious! Thanks for sharing.
