  • 500 g milk chocolate, or Dark Chocolate
  • 20 g Organic coconut oil
  • 200 g marshmallows
  • 20 g dessicated coconut
  • 110 g raspberry lolies
  • 75 g peanuts, 1/2cup Chopped

Recipe's preparation

  1. Line the base and sides of an 20cm x 20cm square baking tray with baking paper.
  2. Place the chocolate and coconut oil
  3. Closed lid"Closed lid"
  4. Blend"Blend" /3min/50c/Speed 2
  5. Add the marshmallows, coconut, raspberry lollies and peanuts
  6. 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 3 mix for 5-10 seconds, (using the spatula to help mix), or until completely combined.
  7. Spread the mixture into the prepared baking tray and place in the fridge for 2 hours or until completely set.
  8. Use a sharp knife to cut into slices (if you are having trouble cutting the slice, run your knife under hot water and then dry completely before cutting - the heat will help to cut the slice evenly).
  9. Hints & Tips
    Slicing - remove the Rocky Road from the fridge at least 30 minutes before slicing - this will help it to stop cracking. Use a large sharp knife to cut the rocky road (or check out my top tips for cutting rocky road here). Equipment - Rocky Road can be made using a microwave, stove-top or Thermomix. If using a stove-top, melt the chocolate and coconut oil (optional) in a small bowl over a saucepan of boiling water (do not allow the water to enter the chocolate bowl). Storing & Freezing - Rocky Road can be stored in an airtight container in the fridge for 1 month or frozen for up to 3 months.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
