Ingredients
Carrot Cake Bites
- 2 carrots, about 150g
- 1 Ripe banana, about 80g
- 60 g Maple Syrup, pure
- 60 g coconut oil
- 80 g almond meal
- 50 g Shredded coconut
- 1 tsp Baking Powder, gluten free
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp vanilla extract
- 1 pinches salt
- 1 egg, using egg replacer
- 50 g walnuts, optional

- Preheat over to 170 C (fan forced) Line or grease a 24-hole mini muffin tray
- Prepare the egg replacer, and set aside
- Add walnuts to the mixing bowl
"Blend" Chop for 3 seconds on speed 5, and set aside
- Add carrots to the mixing bowl
"Blend" Chop for 5 seconds on speed 5
- Scrape down mixing bowl
- Add all remaining ingredients, including the egg replacer, but excluding the walnuts
"Blend" Mix for 15 seconds on speed 5
"Counter-clockwise operation" Add walnuts, mix 5 seconds on reverse speed 3
- Spoon into muffin tin
- Bake for 20-25 minutes at 170 C (fan forced) or until golden and springy
- Let cool completely in the tray before removing (important for structure)

Ingredients: Soaked cashews - 20 minutes in boiling water & then drained (100g), lemon juice (1 tbsp), maple syrup (1 tbsp) and coconut cream (2 tbsp)
"Blend" Blend 30 seconds and speed 8 until smooth and creamy

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
