Simple Carrot Cake
- 160 g rapeseed oil
- 250 g walnuts
- 400 g carrots, cut up into pieces
- 225 g brown sugar
- 1 level teaspoons vanilla essence
- 1 level tsp cinnamon, Ceylon
- 1/4 tsp salt
- 200 g gluten free flour
- 1 level teaspoons bicarbonate of soda
- 120 g raw sugar
- 100 g cream cheese
- 30 g Butter, softened
- 1 level teaspoons lemon juice

- Preheat oven to 180°C. Grease and line a springform cake tin (25 cm) and set aside.
Place walnuts into mixing bowl and chop 4 sec/speed 9. Transfer to a bowl and set aside.
Add carrots and chop 4 sec/speed 5. Transfer to bowl with walnuts and set aside.
Place eggs, sugar and oil, then mix 5 sec/speed 5.
Add vanilla, cinnamon, salt, flour and bicarbonate of soda, then mix 10 sec/speed 5.
Add reserved carrots and walnuts and combine 15 sec/speed 4, with aid of spatula. Transfer batter into prepared cake tin and bake for 55 minutes (180°C) or until wooden skewer inserted into the center of cake comes out clean. Allow to cool in tin for 30 minutes then transfer onto a wire rack to cool completely. Clean and dry mixing bowl.
Place sugar into mixing bowl and mill 10 sec/speed 10.
Add cream cheese, butter and lemon juice, then mix 20 sec/speed 6. Scrape down sides of mixing bowl with spatula, then repeat mix 20 sec/speed 6. Repeat scraping and mixing until icing is smooth. Spread frosting on top of cooled cake and decorate with walnuts and orange rind.
