Ingredients

Dough

  • 1 tablespoon Dry/ instant yeast
  • 250 g Milk, Can use non dairy
  • 1 pinch salt
  • 500 g bakers flour
  • 60 g caster sugar
  • 70 g Butter, Or nuttelex
  • 1-2 teaspoons cinnamon
  • 1-2 teaspoons mixed spice
  • 1-2 teaspoons Nutmeg
  • 1 egg

Paste for Crosses

  • 90 g bakers or plain flour
  • 100 g water
  • 1 pinch salt
  • 1 tbsp olive oil

Glaze

  • 2 tbsp water
  • 2 tbsp sugar

Recipe's preparation

    Dough
  1. Add yeast and milk to bowl and heat 3 minutes/37 degrees/speed 1.

  2. Add all the remaining ingredients (be sure to scatter spices roughly evenly around the bowl) and mix 6 seconds/speed 7.

  3. Scrape down sides of bowl with spatula and knead 2.5 minutes (dough/wheat icon setting ).

  4. Preheat oven to 200 degrees (fan forced )

  5. Set dough mix aside in a clean bowl and cover with plastic wrap or a clean cloth and stand in a warm place until dough doubles in size. This takes about 30-40 minutes. 

  6. Punch down dough and divide into 16-20 even sized portions. Form into balls and place them close together (with still a small space - mine were too close! ) on a greased baking dish. 

  7. Stand in a warm place to prove for 20-30mins or until buns are 1.5 times their original size.

  10. 1. Place all paste ingredients into clean TM bowl and mix 30sec/sp4.

  11. 2. Pour into piping bag and pipe crosses onto buns. 

  12. 3. Bake for about 20mins or until golden brown.

  13. Glaze
  14. Place water and sugar into TM Bowl and cook 2mins/100deg/sp4.

  15. Brush buns with hot sugar syrup while still warm.

Tip

 

VariationsYou can add all sorts of things to the basic dough depending on what you like. Sultana's, currents, cranberries are lovely but so are milk or white chocolate chips, caramel pieces etc. Let your imagination guide you.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Great made with rice milk, Nuttelex and egg-replacer. Left out spices for RPAH elimination diet. Yum!!
