Ingredients
Base
- 125 grams Butter, softened
- 60 grams icing sugar
- 1/2 teaspoon vanilla essence
- 185 grams plain flour
- 1 heaped teaspoon lemon rind, finely grated
Topping
- 100 grams plain flour
- 1/2 teaspoon baking powder
- 65 grams desicated coconut
- 230 grams caster sugar
- 3 eggs
- 2 tablespoons fresh lemon juice
- 1 heaped teaspoon lemon zest, finely grated
- 170 grams passionfruit pulp, (3 or 4 large fresh passionfruit or 1 small can)

Pre-heat oven to 180°C. Grease and line a square cake tin, allowing the paper to hang over the sides for easy removal.
Add the butter, icing sugar and vanilla to the TM bowl and cream the butter and sugar, speed 5 for 15 seconds.
Scrape down the bowl and add the flour and lemon zest and combine 10 seconds speed 5. Scrape the bowl and mix again 10 seconds, speed 5.
Evenly spread the mixture in the tin and gently press it down.
Bake for 15 minutes. Remove from the oven and allow to cool in the tin for a minimum of 30 minutes.
Add the flour, baking powder, coconut and caster sugar to the TM bowl. Mix for 5 seconds, speed 6. Scrape down the bowl.
Add the remaining ingredients and mix for 10 seconds, speed 5.
Pour over the base and bake for 20 minutes. Allow to cool in the tin then refrigerate for at least 2 hours before removing the slice and serving.
