Ingredients

Topping

  • 50 grams Maple syrup

Cake

  • 200 grams Spelt grain
  • 200 grams brown rice
  • 3-4 pears, cored - not peeled, chop in half
  • 2 eggs
  • 1/2 teaspoon salt
  • 2 teaspoon bicarb soda
  • 2 teaspoon baking powder
  • 1 teaspoon vinegar, (apple cider is best)
  • 40 grams cocoa or cacao powder
  • 120 grams Pure Maple Syrup
  • 140 grams oil, macadamia or light olive
  • 150 grams rice milk

Recipe's preparation

  1. 1. Mill spelt grain for 2 minutes Speed 9. Set aside.

    2. Mill rice for 2 minutes Speed 9.

    2. Add spelt flour & remaining ingredients into bowl

    3. Mix on speed 5 for 20 seconds

    4. Pour into a greased and floured Bundt pan or lamington pan

    5. Cook 40 minutes at 180C or until skewer comes out clean

    6. Turn out cake then brush with extra maple syrup

Tip

You can replace pears with bananas, over-ripe papaya or any other squishy fruit sitting in your fruit bowl! You need about 350-400 grams of fruit

    Liv1, I interchange (non dairy)milks  according to what I have available when I make this cake so I dont think coconut milk will be a problem. I have never tried  it with coconut oil but I don't think it would change the texture too much. I'm sure it will alter the taste though. I chose macadamia oil because the taste is light. Enjoy the experimentations. I switch things in and out of this recipe all the time - it's pretty forgiving!

    I have a question.... Could you use coconut oil and coconut milk? I know it would change the flavour... But would it work?
