  • 400 grams ripe pears, cored
  • 120 grams coconut oil
  • 2 eggs
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoons baking soda
  • 1 teaspoon salt
  • 100 grams hazelnuts, (optional)
  • 100 grams Pure Maple Syrup
  • 125 grams rice milk
  • 2 teaspoons vanilla extract
  • 360 grams Spelt grain, (or spelt flour if not milling your own)
  • extra maple syrup for glazing

Recipe's preparation

  1. Pre-heat oven to 180 degrees C and grease 2 loaf pans. If using hazelnuts, add to bowl and chop for 2 secs on Speed 7. Set aside. Mill spelt grain in 2 batches for 2 mins speed 9. Add first batch of spelt to second batch in the bowl along with all other ingredients. Mix for 20 secs on speed 5 to 6. Pour into loaf pans and bake for 40 minutes or until skewer comes out clean. Turn out and while cake is warm, brush with extra maple syrup.

Tip

Pear can be substituted with other soft fruits languishing in the fruit bowl - banana, papaya, peaches, etc

    Cake had a lovely texture & was moist. The pears disappeared & couldn't taste them much so next time I'll add some extra chopped pears at the end. I didn't have maple syrup so used 100g coconut sugar instead & added extra milk (200ml) which turned out fine. I also made half the batch in a tin & the other half as muffins (only baked muffins for 15minutes) I think the muffins worked better than the cake.
