Base
- 250 grams packet of Digestives or Graham crackers
- 100 grams unsalted butter
Brownie
- 115 grams unsalted butter
- 150 grams dark chocolate
- 50 grams brown sugar
- 150 grams raw sugar
- 3 eggs
- 1 tsp vanilla extract
- 100 grams plain flour
- 30 grams cocoa powder
- 1 pinches salt
Marshmallow
- 225 grams white sugar
- 150 grams water
- 20 grams gelatin

- Preheat oven to 180 degrees and line a slice tine with baking paper
Add butter to TM bowl and melt 2 minutes / 55 degrees / speed 1.
Add biscuits and mix 5 seconds / speed 6.
Spread into prepared slice tin and smooth down with the back of a spoon. Bake in oven for 6 minutes. Allow to cool. Meanwhile move onto brownie. - In a clean TM bowl add butter and dark chocolate, mix 3 seconds / speed 7.
Melt 3 minutes / 55 degrees / speed 2.
Insert butterfly and brown sugar, raw or white sugar, eggs and vanilla. Whisk for 1 minute / speed 3.
Remove butterfly and add flour, cocoa powder, salt. Mix 5 seconds / speed 4.
Spread over cooled biscuit base and bake in oven for 20 minutes, now moving onto preparing the marshmallow. - In a clean bowl add sugar, mill 8 seconds / speed 10.
Add water and gelatin and cook 8 minutes / 100 degrees / speed 2. MC OFF.
Set aside to cool to room temperature or until the temperature reading on the TM comes down to 37 degrees when you sit the jug into the base.
Insert clean butterfly and whip for 8 minutes / speed 4. MC OFF.
Spread over cooled brownie and place in the fridge to allow to set.
Once set, using a blow torch if desired gently burn the top of the masrhmallow to really give it that fireside S'mores effect.
Using a hot, wet knife, slice.
Can be left at room temperature, if you dont live anywhere too hot
