Ingredients

Dry breadmix

  • 110 grams brown rice
  • 110 grams basmati rice
  • 120 grams millet
  • 140 grams arrowroot/tapioca flour
  • 20 grams chia seeds
  • 20 grams Sunflour seeds
  • 2 teaspoons xanthan gum
  • 2 teaspoons raw sugar

Wet ingredients

  • 400 grams water
  • 2 teaspoons dried instant yeast
  • 1 teaspoon salt
  • 30 grams macadamia oil
  • 1 teaspoon apple cider vinegar
  • 2 eggs

Recipe's preparation

  1. Preheat oven to 180°C.

     

  2. Add into mixing bowl:

    - brown rice

    - basmati rice

    - millet

    Mill 1 min/speed 9, or until a flour consistency is achieved.

     

  3. Add into mixing bowl:

    - arrowroot flour

    - seeds

    - xanthan

    - sugar

    Mix 10 sec/speed 4.

    Place this Dry Breadmix aside into a bowl.

     

  4. Add into empty mixing bowl:

    - water

    - yeast

    Heat 1 min/37°C/speed 1.

     

  5. Add into mixing bowl:

    - salt

    - oil

    - vinegar

    -eggs

    Mix 15 sec/speed 5.

    Scrape down sides of bowl and mix for a further 5 sec/speed 5.

     

  6. Transfer mixture into loaf tin lined with baking paper.

    Allow to prove by placing tin in a warm area for 30 minutes.

  7. Bake in fan forced oven 40-45 minutes.

    Allow to cool in tin for 5 minutes before transferring to a wire rack. Serve warm or allow to cool completely before placing into container and freezing.

Tip

Serve gluten free bread with your favourite jams or use to make gluten free breadcrumbs.

Proving time may vary depending on season or ambiance. Choose a warm, dark place to leave your dough to prove and try covering your tin with a tea towel to insulate the heat, if necessary.

If your dough hasn't risen after 30 minutes, allow to prove for a further 15-30 minutes or until nearly doubled in size. A maximum of 45-60 minutes should be sufficient.

    Lovely light sead bread . Perfect for my strict Fodmap limitations. It would be easier for people to follow if it said when to add the dry ingredients back in at the end and I must admit I did knead it for 1 minute but overall a lovely recipe . Thanks
