Ingredients

Fruit bread

  • 350 grams water
  • 9 grams dried instant yeast
  • 30 grams sugar
  • 590 grams flour, Bread flour is most definitely the one to use as it has more gluten
  • 20 grams olive oil
  • 2 teaspoons bread improver
  • 1/4 tsp mixed spice
  • 1/2 tsp ginger, stem, Please use ginger powder
  • 1 tsp cinnamon quill, Please use cinnamon powder
  • 200 grams dried fruit, mixed
  • 1 dash Milk, For glazing before baking
  • 1 egg, For glazing before baking

Recipe's preparation

    Fruit bread
  1. 1) Add water, yeast and sugar to the tm bowl and set 2 mins, 37 degrees at speed 2.
    2) Add bread flour, olive oil, improver and spices. Mix 2 seconds at speed .
    3) kneed for 5mins 30 seconds.
    4) Add dried fruit and kneed for another 20 seconds.
    5) Turn dough onto a silicone mat and bring the dough into a ball. Either wrap in the silicone mat or oil a bowl and cover. Allow the dough to dough in size. Please be patient with this step as it's really important. Everyone's environment is different. Eg if it's cold it'll take longer and if it's warm it'll take less time.
    6) once your dough has risen knock the dough back removing the air. Then divide the into 3 pieces and with each piece flatten into a small rectangular shape and with a rolling pin or your hands, roll the dough flat. Once the dough is flat roll the dough up into a log shape. This is work the gluten in the dough to give a fluffy texture once it's been baked. Tuck the ends under and place into a large bread tin. Then continue with the other 2 pieces.
    7) Cover and allow to rest for at least another 45 mins. Preheat the oven @ 180 degrees at the 30 minute mark.
    tmrc_emoticons.8) Mix the milk and egg in a small bowl and brush the dough lightly, then sprinkle with icing sugar.
    9) Place the dough into the oven and bake for 20-30 minutes depending on your oven. I like to take out off the tin around the 20 minute mark and allow the loaf to get a little crunchier crust.
    10) Place on a wire rack to cool for at least 30 minutes before cutting (even though it's really hard to resist)

Tip

If your environment is cold you can heat your oven to the lowest possible temperature to help the dough rise.
Dough can also be make into fruit rolls.
