Ingredients

Damper

  • 410 grams Self Raising Flour
  • 2 teaspoons sugar
  • 1 pinch salt
  • 80 grams chilled Butter, cubed
  • 170 grams water, may need a tad more depending

  • 100 grams Parmesan cheese, Grated in TM Bowl
  • 100 grams black olives, pitted, Chopped in TM Bowl

Recipe's preparation

    Damper
  1. Preheat oven 190C

    Grate Parmesan in TM Bowl for 10 seconds on speed 9. Set aside.

    Chop Olives in TM Bowl for 2-3 seconds (depending on the size you wish to have in your Damper)  on speed 7.  Set aside. 

    Place flour, sugar and salt in TM bowl with chilled butter, mix on 5 seconds, speed 5 until it resembles bread crumbs.

    On speed 5 add water until dough forms approximately 170g.

    Add Olives and Parmesan cheese.

    Set dial to closed lid position, Knead the dough for 2 minutes on interval speed.

    Dough may be more sticky than other dough but get out with spatula using flour on your hands and on surface if needed. Mould into round shape or use a round cake tin.

     

    Cut across the top and brush with a little milk.

    Bake for 30-40 mins.Damper is ready when you tap it and it sounds hollow.

    Allow to cool a little but yummy served warm with butter..

    I was looking at bread recipes to make something to go with our soup & I found this recipe & thought I would try it instead.  My husband absolutely loves it & keeps saying how good it is (not something he generally does).  So thanks.  I will definitely be making this a lot & will try a gf version for my Mum to try.

    Cooking 7 I will be baking this damper recipe tomorrow Saturday 23.2.13 (without the parmesan and olives) for 27 Rotary Exchange students from all over the world. They are visiting Umina SLSC for a beach/surf lifesaving experience.
