Ingredients

Dough

  • 250 grams tapioca starch
  • 250 grams grated cheese, Fresh cheese and some hard cheese. I use mozarella and combine with gouda (2 to 1)
  • 2 eggs
  • 2 tablespoons baking powder
  • 2.5 tablespoons melted butter
  • 1 tablespoon sugar

Recipe's preparation

  1. 1. Add all ingredients together into the Thermomix

    2. Stir for 1 minute at speed 2 to mix thorouhly  

    3. Knead for two minutes (spigot)

    4. Mold into balls, sticks or croissant shape

    5. Bake for 15 to 20 minutes at 180 degrees Celsius until golden (dont overcook)

Tip

You can freeze the pandeyucas placing them (without baking) in a baking sheet inside the freezer and covering with plastic wrap.  Once frozen you can bag portions as needed.  They stay good for over three months.

To bake, just preheat the oven to 180 degrees C and bake for 15 to 20 minutes until you get the desired color.
