- 0.375 litres water
- 20 grams fresh yeast or 1 sachet dry yeast
- 1 pinch sugar
- 500 grams Tipo 00 flour
- OilveOil

1) Add 375ml water to TM Bowl and set temp to 40 for 1min30sec on low speed.
2)Add Yeast, pinch of sugar to water and blend on 2 for 5 secs, let sit in bowl with lid on for 5 mins (Important to place yeast in 40 degree water to activate).
3)Add the 500g tipo 00 four, teasoon of salt and a drizzle of oil to the water/yeast. Put lid on and "Dough mode" for 3 mins until dough is elastic.
4)Place dough in large enough bowl that will allow to rise to double the size, place bowl in warm area of house, place a damp tea towel over bowl and let sit for 2+ hours
Tip
Cut into even balls and place on trays and let rise once with damp tea towel over

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Mary-Ann Naguib: I made this again (few months later) and the dough was just as sticky and soft. I added a little bit more flour, but decided to just try it as is. It rose really well when left to aside (over 2hrs), however, did not rise when cooked and ended up being a disaster. I am not sure what I am doing wrong...
I have been wanting to make pizza dough for so long, and this one looked straight forward. Have made it twice now. Dough is very elasticy and sticky. Not being a professional in dough making, I wasnt sure if this was the right consistency. I did add a bit more flour the 1st time, as it seemed too soft and sticky. It did rise well, and was super stretchy when I was trying to stretch it out into pizza bases. Dough was beautiful after it baked though. My husband really liked it and he is usually hard to please.
I will say that a little more information in the directions is good for beginners, especially regarding what the dough should look like after kneading). Also, weight of sachet of yeast is useful to add, as I had a container of yeast and had to guess. I think it is usually about 7grms, but 1st time added too much.

First time I have ever made my own pizza dough. Easy recipe to follow and the flavour & texture were just as I liked it.
This dough is FABULOUS! So easy to do and tastes great. Light and fluffy dough. Loved by the whole family... definitely saving as one of our favourites.
