Recipe's preparation

  1. Activate the yeast: Place warm water, yeast, and honey in the Thermomix bowl. Mix for 5 seconds on speed 3. Let it sit for 5 minutes to activate.
  2. Combine dry ingredients: Add whole wheat flour, spelt flour (or all-purpose flour), and salt to the bowl. Mix for 10 seconds on speed 4.
  3. * Knead the dough: Add olive oil and knead for 2 minutes on "Interval Knead" setting.
  4. * Second knead (optional): After the first rise, briefly knead the dough again for 10 seconds on "Interval Knead" setting. This step helps develop gluten strength.
  5. * Second rise: Shape the dough into a ball and place it in a lightly oiled bowl. Cover with plastic wrap and let it rise in a warm place for another 45 minutes or until doubled in size.
  6. * Bake: Preheat your oven to 220°C (425°F). Line a loaf pan with baking paper. Gently transfer the dough to the prepared pan. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. * Cool: Let the bread cool completely on a wire rack before slicing.

Tip

Tips:
* You can substitute spelt flour with all-purpose flour if needed.
* For a softer crust, brush the top of the bread with melted butter or milk before baking.
* The actual baking time may vary depending on your oven.

    Recipe is created for
    TM 6
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
