Ingredients

Vanilla Custard

  • 100 g raw sugar
  • 70g g custard powder
  • 40g g Corn Flour
  • 300 g Pure cream
  • 600 g full cream milk
  • 1 tbsp Vanilla Essence/ Extract

Recipe's preparation

    Authentic Italian Custard
  1. Add sugar, custard powder, corn flour to mixing bowl. mix for 10 seconds/ speed 9

     

    Scrape down side of bowl

     

    Insert Butterfly

     

    Add milk, cream and vanilla, 100 degrees/ 20 minutes/Gentle stir setting"Gentle stir setting"  (MC OFF)

Tip

This custard is beautiful on every occasion. I always have stood over the stove for half an hour stirring custard, this is a fantastic authentic custard my Italian family love as it is Nonna’s recipe made in the Thermomix.

If you don’t have cream available, you can substitute the cream for milk. So use 900g of milk and no cream, rather than 600g milk 300 cream.

This custard is yummy cold also.

The NURSES brand of Corn Flour and Custard Powder works great in this recipe

    I had to add an extra 10 minutes to this custard to get this to thicken but then it worked well. I’m not a fan of thermomix whole egg custards, so this was a nice alternative. I used Custard Powder from the RC (link below) and tapioca starch.

    Was a really nice flavour and good consistency (despite only having 50g of custard powder!). However when I poured it out of the bowl, I discovered it had burnt on the bottom. I used oat milk, so I wonder if this was the reason?!

    I honestly think this has something to do with the scales of the thermomix, as the ingredients i use for this recipe are quite light. 

    Nothing beats the old measuring cups,

    maybe next time try,

    1 cup sugar

    1 cup custard powder

    half cup corn flour 

    then add the wet ingredients.

    I'm so glad you liked it. I also find it soooo hard to measure such a small amount of corn flour in the Thermomix, as flour weights almost nothing!! I find if its not thickened in 20 minutes, I just keep the thermomix cooking until its thickens.

    Lovely flavour, though mine was way too runny. Followed recipe except didn't have any cream so I used 900ml full fat milk. Wonder if I should have had speed up to 2 instead & had it going for 5mins longer. I did have the mc off as per recipe, which should have reduced liquid. Any thoughts?? I will def make it again but will need to either reduce liquid or add extra cornflour If not using cream.

    I added 1 egg yolk at the end of cooking time, because I prefer my custard with egg. Old Nonni style
