Ingredients

Trifle

  • .25 litre sweet sherry
  • .25 litre passionfruit pulp, about 10 passionfruits
  • 125 grams savoiardi, lady finger biscuits
  • 4 Mangos, large sliced

Custard

  • 400 grams thickened cream
  • 200 grams full cream milk
  • 5 egg yolks
  • 60 grams caster sugar
  • 40 grams cornflour
  • 1 vanilla bean

To decorate

  • 300 grams cream, whipped
  • 5 meringue nests, crumbled

Recipe's preparation

  1. Combine sherry & passionfruit pulp in a bowl and dip biscuits, one at a time & arrange over the base and partially up the side of a large glass bowl. Reserve remaining syrup.

  2. Arrange the sliced mango on biscuits showing some fruit around the side of the bowl.

  3. Place the custard ingredients into TM bowl, scrape out the seeds of the vanilla bean and add.

    Cook 7 minutes / 90 / speed 4.

    Pour the custard over the mangos and top with whipped cream

     

     

  4. Cover and refrigerate overnight.

  5. Serve the trifle topped with crumbled meringue and reserved passionfruit syrup.

Tip

You can make your own meringues with the left over egg whites if you wish.

    I love this recipe! Each time I make it I do it a little different. I use pineapple juice instead of buying sherry and usually throw an assortment of fruit on top instead of meringue as I'm too lazy to make mmeringue. I've also added jelly too when I couldn't find enough mango. I prefer this recipe over the usual sponge trifle and everyone always comments how nice it is.

    This is a lovely recipe thanks so much for the idea. I made this quantity and used extra whipped cream for the top layer for a dinner party, serving them in individual glass ramekins and they looked impressive and tasted lovely. I had many compliments. My only mistake was putting a touch too much cornflour in the custard so it went a bit too thick and jellyish by the next morning. But nobody noticed tmrc_emoticons.;) just I will watch it next time. I also found it was quite sherry tasting, if I had kids over I would be tempted to use half sherry half water in that part. But it was lovely. Will definitely make again!

    This is a beautiful dessert. I used pineapple juice instead of sherry, I couldn't get lady finger biscuits so I used sponge cake instead. I also added blueberries and strawberries on top with the meringe. It came out so yummy!  I also made the trifle in individual glasses and they looked wonderful. tmrc_emoticons.)

    Thanks for sharing a great alternative to standard trifle. I could only get 'cream apera ' sherry on Christmas Eve  and was told that this is still a sweet sherry (I am not a sherry expert!).

    I am not sure if this impacted on the final result as I found the sherry quite dominating in flavour. I also had a lot of liquid left after soaking the biscuits so next time I won't pour it all in.
