- 90 grams Butter
- 190 grams Milk
- 2 eggs
- 10 grams chia seeds
- 90 grams sugar (of choice)
- 250 grams Self Raising Flour
- 150 grams blueberries (fresh or frozen)
- 15 grams Self Raising Flour extra

Preheat oven to 200 degrees and grease a 12 hole muffin tin or line with papers.
Melt butter 2 min / 80 degrees / speed 2
Coat blueberries in extra flour. (This stops them from sinking to the bottom on the muffin)
Add remaining ingredients to bowl (except fruit) and mix for 15 sec / speed 3.
Scrape down bowl and mix for a further 3 sec / speed 3
Add blueberries and fold through with spatula until incorporated.
Divide mixture evenly among the muffin tin using an ice cream scoop.
Bake 15 minutes until they spring back when lightly touched. Cool in tin for 5 minutes before turning out.
Tip
You can substitute any fruit in this recipe.
I developed this recipe because I needed a quick healthy treat I could cook in the morning to put in the childrens lunchboxes, with ingredients I always have on hand.

Great for the lunchbox!
I have made these tonight for the lunch boxes & tried one with my cuppa. They are light and not too sweet. Super easy recipe and the berries really were all the way through the muffin rather than down the bottom, good tip!
