- 220 g rice flour
- 200 g coconut milk
- 160 g hot water
- 100 g sugar
- 1/4 teaspoon vanilla essence
- 1 tablespoon pandan paste
- 1 tablespoon dry yeast

1. Mix flour, water and sugar speed 5/ 10 sec
2. Add yeast and mix speed 5/10 sec. Set aside in a bowl for the mixture to rise and bubble. (Usually about 3-4hours, or leave overnight in the fridge). The yeast will make the mix thicken.
3. Once it has risen and started to bubble and thicken stir in coconut milk, pandan paste and vanilla essense.
4. Place 1 litre of water to varoma /speed 2 /5mins
5. Pour mix into moulds or pan and place on Varoma
6. Place varoma tray on TM and steam on varoma /speed 2 /15mins.
Tip
A variation from coconut can be use such as soy and almond.
When using dairy milk, ensure the yeast does not over work the mixture or it will be very bitter and yeast tasting.
Instead of pandan, try using a whole banana mashed with a handful of chia seeds.
