Ingredients
Butterscotch Baileys
- 200 grams Cadbury Milk Chocolate, Broken into pieces
- 375 grams condensed milk, 1 can
- 750 grams evaporated milk, 2 cans
- 300 grams Bulla Pure Cream, 1 sml carton
- 30 grams Espresso Coffee Shot
- 700 grams Butterscotch Liqueur, De Kuyper brand - You could try a cheaper brand though.

- A delicious twist to regular Baileys!
Place chocolate pieces into bowl - grate for 5 seconds / speed 9
Melt chocolate 2 minutes / 50 degrees / speed 2
Once chocolate is melted - scrape down bowl with spatula
Set 3 minutes / 50 degrees / speed 2 MC OFF and pour both milks, cream and coffee into the bowl within those 3 minutes.
Using spatula, scrape bottom of bowl and sides if necessary to encorporate all chocolate.
Mix again for 10 seconds / speed 2.
Set mixture aside in a large jug or bowl (minimum 3L capacity)
Without washing bowl, place Butterscotch Liqueur into the jug and mix for 5 seconds on speed 9.
Add butterscotch into your mixture already set aside and stir to combine.

Butterscotch Baileys
Tip
This recipe will yield just over 2L of Butterscotch Baileys.
I have divided this into 8 x 250 glass bottles from the reject shop for $1 each - they make perfect gifts! The leftover went to quality control - ofcourse - Just to make sure it was okay!
Baileys will last in the fridge for 3 months & give it a good shake before you pour.
My favourite way to serve is on ice blocks on a warm summers day/night.
If you have used a large bowl, I find a funnel makes it much easier to pour into another smaller jug, to then pour into smaller bottles. I used my Jam funnel to pour half the mixture from the bowl into a pouring jug, and then a smaller funnel to get it from the pouring jug, into my 250ml glass bottles.
Make sure you sterilize your glass bottles prior to adding your Butterscotch Baileys.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
