  • 200 grams ice cubes made from frozen lychee syrup
  • 1 can frozen lychees
  • 1 bottle champagne (or sparkling wine)
  • 1 bunch mint leaves, fresh

Recipe's preparation

    Champagne Lychee Cocktail
  1. Place ice cubes, lychees and mint into TM bowl and crush for 20-30 seconds on speed 7.

    Add 100g of champagne and mix for 20 seconds on speed 4.

    Add another 500ml of champagne and mix for 20 seconds on speed 4.

    Pour into glasses.

    Beautifully refreshing! Took to a party in my thermoserver (lychees & mint) but mixed the bubbly in by hand after I got there. Wish I took more!

    I used a can of lychees (can size was 567g in total - 255g drained weight) - froze the syrup in ice cube trays and froze the lychees in a container

    Big hit ! I made this in the thermomix, popped into thermoserver with some ice cubes (water) and then put the thermoserver into a cooler bag and travelled to a bbq about 45 minutes drive - it was still tasty and icy !

    I made this without mint.

    Such an affordable cocktail to share.
