Gin Fizz Cocktail

  • 1 kg ice
  • 150 g castor sugar
  • 3 lemons
  • 4 g good meaures of gin, (I prefer Bombay Sapphire)
  • fresh mint leaves, to serve

Recipe's preparation

  1. Peel off lemon rind and place in TM Bowl with sugar and blitz 30 seconds/speed 9

    Add half the Ice to bowl and mix for a further 30 seconds/speed 8

    Place steam basket into jug and pour the smooth mixture through and into another jar. Add gin portions and stir.

    Place remaining ice in glasses and pour the lovely Gin Fizz over the top.... a refreshing way to drink merrily !

    PS I often retain the piff from the jar and freeze into ice cube trays and use later as seasoning for water etc.

    can you please confirm the gin quantity seems so little compared to the rest of the ingredients?

    Absolutely loved this drink. So refreshing on a hot day. I didn't strain anything either. Just added it all the the glass. Would be great for the kids also (minus the gin) So delicious.

    Delicious drink, however, I couldn't strain the ice / rind / sugar mix because it was too thick, like a sorbet. I scooped it into glasses anyway (needed a straw to drink it) and my guests loved it.

    That was absolutely delicious.  I only made 1/3 of the quantity because I was only making enough for 1 person and it was thick - more like a lemon sorbet with a hint of gin.  Will defintely make it again (but with a friend).  After the first half of the ice there was nothing pourable in the jug - it was a sorbet so I just added the rest of the lemon and the gin and gave it another wizz.

    Just want to check with you that the ice quantity is right. 500g seems a lot of ice to do in only 1 batch?
