Ingredients

Eggnog

  • 4 egg yolks
  • 2 tablespoons brown sugar
  • 2x400ml cans coconut milk
  • 1 tablespoon Vanilla Essences
  • 1/4 teaspoon Peppermint essence/extract, Or 1-2 drops of peppermint essential oils
  • 12 sticks Large Candy Canes

Recipe's preparation

    Peppermint Candy Cane Eggnog
  1. 1.Blitz 12 large Candy Canes 3 sec  sp7- more depending how fine you would like your candy cane garnish. Put aside HALF for garnish

     

    2.Insert the butterfly making sure to give it a spin gently with your fingers so there isnt any candy cane stuck underneath the butterfly

     

     

    3.Add egg yolks and brown sugar, blitz for 40 sec spd 3

     

     

    4.Add coconut milk, peppermint essence and vanilla, blitz for 20 secs, spd 3

     

     

    5.Cook for 10 minutes, 70 degrees, spd 3.

    Serve hot with sprinkled Candy Canes

This method can be used in the TM31 or TM5.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Sooo good! You see &/or hear of Eggnog at Christmas time in all the American movies & books but I had never had the chance to try it till last night. So good! Good hot or chilled ... my preference was hot. Fabulous as is for the whole family, or you can also add your favourite tipple to it for an adults only version.
