Ingredients

Sticky Chai Tea - Based on Donna Hay's Recipe and adjusted slightly

Sticky Chai Tea

  • 16 pods cardomon pods
  • 24-30 grams cinnamon quills, Broken into pieces
  • 8 piece star anise
  • 1 heaped teaspoons cloves
  • 1 heaped teaspoons fennel seeds
  • 60-80 grams Or 1 Cup Loose Black Tea leaves, Suggest Assam or Orange Pekoe. Try any large leaf tea.
  • 50-60 grams Or 3/4 Cup Shredded Coconut
  • 1/2 teaspoons Finely grated Nutmeg
  • 20-30 grams Dry Ginger Root, Or 2 tablespoon Dry Ginger
  • 1 teaspoons black peppercorns
  • 90 grams Or 1/4 Cup Honey Heated, Heat 10-20 sec in Microwave
  • 1 teaspoons Vanilla Bean Paste
  • 1 tablespoons lemon juice

Recipe's preparation

    Sticky Chai Tea
  1. 1. Place the Cardomon, Cinnamon, Star-Anise, Cloves and Fennel Seeds into bowl
    Closed lid"Closed lid" 10 Seconds / Speed 6

    2. Add the Tea Leaves, Coconut, Nutmeg, Ginger & Black Peppercorns
    Closed lid"Closed lid" 20 Seconds / Speed 4 / Reverse

    3. Add the warmed honey, Vanilla & Lemon Juice
    Closed lid"Closed lid" 20-30 seconds / Speed 2 / Reverse

    4. Place into Jars and store in refrigerator if not using for a while

    5. To make Chai. Place approx 2 heaped tablespoons into jug with a little boiled water to wet the Chai.

    6. Add approx 200-250 ml milk of choice. Soy or Almond are especially nice.

    7. Heat to 65 degrees using milk frother or heat on stove top.

    8. Use strainer and pour into cup - enjoy.

Double the recipe works really well.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
