Ingredients

Beef Risotto

  • 2 teaspoons crushed garlic
  • 2 teaspoons Italian herbs paste
  • 1 Brown onion quartered
  • 70 grams Butter or Margarine
  • 2 tablespoons tomato paste
  • 1 or 2 tablespoons Vegetable Stock Concentrate (EDC)
  • 1 --- carrot, large diced
  • 1 Zucchine, large diced
  • 500 grams Beef mince (premium)
  • 1 can diced tomatoes
  • 300 grams water
  • 200 grams long grain white rice

Recipe's preparation

  1. Use steamer basket to weigh 200g of dry rice in thermomix and then pour in to a small bowl and set aside.

    Dice up Carrot and Zucchine in to medium sized pieces and set aside.

    Place Garlic, Italian Herb paste and quarted onion in to bowl and chop for 3 seconds on speed 6.

    Add the butter or margarine and saute the garlic, herb paste and onion for about 3minutes on Varoma on speed 1. Leave the MC off.

    Add the diced carrot and cook for a further 1 minute on Varoma on speed 1 with the MC off.

    Add diced tomatoes, tomato paste, vegetable stock and Zucchini. Cook for 5 minutes on Veroma setting on Gentle stir setting"Gentle stir setting" . I like to turn the steamer basket upside down and place it on top of the thermomix to help prevent splattering.

    Add mince and cook for 8 minutes on Varoma on speet 1. Once finished remove the lid and use the spatula to break up any lumps of mince.

    Insert Butterfly, rice and water and cook for 18 to 20 minutes (depending on how you like your rice) on 100degrees on Gentle stir setting"Gentle stir setting" .

Tip

You can use fresh garlic and herbs of course I just used the squeezie tubes I had on hand. If using fresh just mince them up with the onion at the beginning.

    Jashyboo:I've been tipping the hot stuff out into a ceramic bowl then adding the butterfly and then tipping it all back in but now that i've read people don't even bother putting the butterfly in, I think I'll do that in future.

    I slightly tweaked the recipe to cater to what I had on hand.

    I used a handful of fresh basil and parsley - added in with the onions and garlic.

    I added 1 red capsicum diced, and thrown in with the zucchini.


    I used 400g tinned tomatoes and a 400g tin of condensed tomato soup.

    A teaspoon or two (didn't measure) of balsamic vinegar

    I only had Coles Bolognaise mince (1/2 beef 1/2 pork) so that's what I chucked in

    & reduced my water to 200g

    Bloody amazing!
    Will be making this recipe again for sure.

    Like all Thermomix risotto recipes, the product is quite gluggy and not a shade on the handmade thing using proper arborio rice and which does take a lot of time to get the rice right. A Thermomix cannot possibly do it, and I can't imagine an Italian ever thinking the result was acceptable, and you'd never pay for it at a restaurant in a place like Melbourne: BUT... as a very quick, second-best outcome, the Thermomix version is OK, although I prefer to use my machine for things it does better. I laugh when people tell me their Thermomix risottos are 'great'. They're OK...and acceptable as slightly gluggy quick rice dishes, but good risottos - which take time - they are not.

    This was really enjoyed by my husband and I, I followed previous comments and didnt use the butterfly attachment, I also used arborio rice and cooked for 20mins at the end.
    Im going to make a chilli con carne variant of this as i think it would taste great with some sour cream and guac.

    This is delicious and easy. I also added chopped broccoli and spring onion. I didn't use the butterfly after reading other comments. Would definitely make this again.

    Delicious thank you for the recipe 👏 So glad I read all the comments - added 1 stalk celery, 1/2 red capsicum and a few mushrooms plus used veggie liquid stock instead of water and Arborio Rice - I didn't worry about inserting the butterfly attachment. Was a hit and will definitely be making again😛
