Ingredients

  • 500 g chicken, diced
  • 100 g chorizo
  • 20 g olive oil
  • 200 g Pearl Cous Cous
  • 420 g Tomato Soup (Big Red)
  • 300 g water
  • 2 cloves garlic
  • 2 heaped tbsp veggie stock concentrate
  • 1 teaspoon Paprika (smoked)
  • 150 g Chargrilled capsicum (skin and seeds removed), Sliced
  • 70 g frozen peas, thawed

Recipe's preparation

  1. Place peas into Thermoserver or bowl and set aside.Put chorizo and garlic into the mixing bowl and chop 5 Sec Sp7. Scrape down sides and add Olive Oil. Saute 2 min/100/Sp1

     

     

  2. Put in place the butterfly wisk. Add cous cous and saute 1min/ 100 /Sp1  Counter-clockwise operation"Counter-clockwise operation"

  3. Add all other ingredients and cook 14mins/100/Sp1Counter-clockwise operation"Counter-clockwise operation" .

  4. Place into Thermoserver and mix through the peas and season with salt and pepper. Leave to sit 10 mins or until ready to serve.  Enjoy!

    the soup gives a certain flavour i have not yet been able to fully replicate, but yes tomato passata would still totally work.

    Well my husband had two bowls and licked the bowl clean before telling me that I could and I quote "Sell this in a restaurant"!   I used homemade tomato passatta instead of Big Red as we don't eat canned soup.  I only gave it 4 stars as I wasn't overly excited about it.  I don't think I am a fan of pearl cous cous.  However if my husband loved it then that is a great thing.  tmrc_emoticons.D

    wanting to make this tonight.  I don't have tomato soup as it is not something we eat.  Do you think Tomoato passata will do?

    I made this tonight for the first time and the whole family loved it! Thanks!! I did make the mistake of using butcher bought chorizo and after step one, it looked like I had a bowl full of sausage mince. Next time, I'll use the cryovac packaged one instead.     OMG!! This recipe is to DIE FOR!! Its my new favourite dish and it is so quick to make. We had it with a salad of corn, red capsicum, tomato and coriander which will stretch it out to 6 meals.
