Baba Ghanoui (egg plant dip )

  • 2 cloves garlic clove
  • 220 grams eggplant chopped, 220g after grilling and peeling
  • 10 grams tahini
  • 20 grams lemon juice
  • 1 teaspoon salt
  • 1 tablespoon Evoo

  1. Grill whole eggplant over a gas flame, turning with tongs until the skin is evenly toasted.This is what gives the wonderful smokey flavour

    When cool, completely peel the eggplant. Place garlic into TM bowl and chop 3 seconds on speed 7     Add Eggplant  tahini, lemon and salt and mix for 20 seconds speed 5 or until well combined and creamy. 

    Place the mixture in a serving bowl and make a well in the centre just deep enough for the oil to be poured in. Sprinkle paprika on top.

    Note: The amount of lemon, salt and tahini can be adjusted according to your personal taste.

    Love it! I added the listed amount of salt though and it was way to salty for us. I also accidentally added the oil with the other ingredients but I think that made it more creamy which we loved.  To rid the salt issue I just made another batch, didn't add salt and then added them both together. 

    Thanks for a great recipe.

    Love loved this. Is creamy, rich and just beautiful. I added slightly more lemon as I poured it all it too quickly- oops! No complaints from me!!! Thanks

    Hi! Maybe you forgot to take all the burnt skin off? Maybe next time bake in the oven for a milder flavour?

    Yes you do have to cook it by grilling it.  The recipe says to grill it on an open flame, but I usually bake it in the oven for 40 mins.  Baking doesn't give you the smokey flavour but is less work!  Good luck.

    I just made this recipe and it was totally inedible. HELP what did I do wrong? Are you meant to cook the eggplant. It was very very bitter. any help would be appreciated.
