Recipe's preparation

    Fennel, Dill & Lemon Butter
  1. Place lemon zest and salt flakes in Thermomix bowl and chop for 2 seconds / speed 10. 

  2. Add wild fennel and dill and chop for 2 seconds / speed 9.

     

  3. Scrape down the sides of the Thermomix bowl and add the olive oil. Mix for 20 seconds / speed 4.

  4. Add the black pepper and butter and mix for 20 seconds / speed 3.

  5. Either roll butter into logs, wrap in clingwrap and chill.

    Or place the soft butter into silicon moulds and chill, like I did this time. A dragonfly butter with hearts of butter around. tmrc_emoticons.)

Tip

You only need the simmering basket and the butterfly if you decided to make your own butter from the EDC, like I did.

    My dill and fennel fronds were very big, so I had to double the amount of butter. Then I mixed it for 20 seconds speed 5 as my butter was cold (so needed extra blending to be smooth).
