Ingredients
gluten free flour
- 100 g Chickpeas
- 100 g White Rice (any)
- 50 g amaranth grain
cake base
- 250 g gluten free flour
- 30 g Rapadura Sugar
- 1 egg yolk
- 125 g Butter
- 1 pinch salt
- 20 g water
cake topping
- 800 g Sugar Plums, stones removed and halfed lengthwise
- 3 egg whites
- 3 egg yolks
- 40 g sunflower oil
- 380 g Ricotta cheese (home made)
- 1/2 tsp Vanilla Paste
- 20 g corn- or potato flour
- 80 g Rapadura Sugar
- 1 tbsp each cinnamon and raw sugar, to sprinkle over plums

Grind chickpeas 1 minute/speed 10 and set flour aside.
grind White rice and amarant 1 minute/speed 10.
Combine flours and use in cake base
Combine all ingredients and process for 10 seconds/speed 5.
Roll crumbly dough onto thermomat and combine into a ball. Let the ball rest rolles in cling wrap, for 1 hour in the fridge.
Grate half the ball into a cake tin covered with baking paper. Flatten the base.
First clean bowl and whipp egg whites for about 2 minutes/speed 3.5 with butterfly inserted. Set stiff egg whites aside.
Place egg yolks, ricotta. sunflower oil, vanilla bean paste. cornflour, sugar into bowl and whipp with butterfly in place for 1 itute/speed 4.
Remove butterfly and fold in reserved eggwhites.
Pour cake mix onto cake base in tin. Spread evenly.
Lay cut plums in an even layer on top of the ricotta mixture.
Sprinkle cinnamon and raw sugar generously over plums.
Grate leftover cake base ball over the top of the cake.
Bake for 50 minutes in pre heated 180 degrees fan forced oven.

Tastes delicious with whipped cream or vanilla ice cream.
