Ingredients
Pizza Sauce
- 1 small onion, Peeled and halved
- 2 cloves garlic, Peeled
- Handful parsley, leaves only
- handful chives
- 2 sprigs rosemary, No stalks
- 2 bay leaves
- 1 tbsp dried oregano
- 1/2 lemon juice
- 20g olive oil
- salt to taste
- 1 tbsp TM veg stock concentrate
- 2 x 690ml jar passata
- Little extra water

1. Peel garlic and onion and add to bowl.
2. Add all herbs listed and lemon juice. Season with salt. Place lid with MC and mix on speed 7 for 5-7 sec. Remove lid and scape sides. Replace lid and mix on speed 7 for a further 5-7 sec and scrape sides again.
3. Add olive oil and TM veg stock and saute for 5min at 100 degrees reverse speed 2.
4. Add the 2 jars of passata and sugar. (Note once the jars are emptied I put a little water in them and replace the lid and shake and then I add this to the bowl as well so there's no wastage).
5. Place lid with steam basket on top and cook 20 minutes Varoma reverse speed 2.
6. When finished purée for 20 seconds whilst gradually increasing speed to 7 until smooth.
Pizza Sauce
Tip
This recipe is great anytime but is particularly thrifty when tomatoes are out of season. This recipe cost me approx. $5 to make as I used fresh herbs from my garden. This quantity should be enough to make approx 32 pizzas.
To make easy pizza sauce portions I laddle the sauce into a silicone muffin form and freeze. Once frozen I then remove the portions and place into zip lock bags and return to the freezer until needed. One portion is usually enough for the pizza dough quantity made using the TM chip recipe.
This pizza sauce can also be added to cooked pasta and served with Parmesan cheese for a quick snack. It is also nice added to cheese and bacon scrolls.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
