I'm cooking this today

Recipe's preparation

  1. Put peaches and sugar into TM bowl and chop for 3-5 seconds on speed 6. Scrape down the bowl.

  2. Cook for 60 minutes at 100 degrees on speed 2, with MC off. Put simmering basket on top of TM lid in place of MC. This will deflect the splashes.

  3. Pour into sterlized jars and seal.

  4. Pour into sterlized jars and seal.

Tip

This jam can be made as a chunky or a smooth jam. Adjust chopping time accordingly. For a chunky jam i would chop for less than 3 seconds.

I like to cook this jam with the MC off, as it gets to the setting point quicker. To check if it has reached setting point: put a saucer in the fridge. Drop a teaspoon of jam onto the cold saucer. Put the saucer back in the fridge for a few minutes and then hold the saucer up vertically so that some jam runs or dribbles. If the dribble has some thickness and form to it, then it is at the set point. Cook for longer if it hasn't reached the set point yet.

Made this with blackboy peaches. It's really yummy. Mine was a bit runny as I didn't cook it long enough but still delicious just the same.

I used 350g of sugar to 1.1 kg fruit. Well see how it turns out
